We’re looking for a hands-on Head Chef / Kitchen Manager to lead our kitchen, support the team and keep everything running smoothly day to day.

The Role
This is a working Head Chef role, not an office job. You’ll be on the floor, cooking with the team, leading service and managing the kitchen operation. You’ll be responsible for food quality, team leadership, stock, labour and kitchen standards.
You’ll manage a mix of full-time and part-time chefs, helping them develop while keeping the kitchen organised, efficient and positive.
Key Responsibilities
– Lead, train and manage a diverse kitchen team
– Create a positive, respectful and supportive working environment
– Be hands-on with prep and service across sushi, ramen, rice and hot dishes
– Maintain food quality, consistency and presentation
– Manage stock ordering, stock control and waste
– Contribute to menu development and new Japanese dishes
– Plan rotas and control labour costs
– Ensure kitchen cleanliness and organisation
– Maintain all food safety, health & safety and COSHH standards
– Complete and maintain required kitchen paperwork
About You
– At least 1-2 years of experience of leadership role in the kitchen, with ability to resolve conflicts between team members
– Comfortable leading a busy kitchen and working under pressure
– Japanese food experience preferred (sushi / ramen / izakaya), but not essential
– Strong leadership and communication skills
– Organised, reliable and proactive
– Good understanding of food hygiene and safety
– Food Hygiene Level 2 or 3 (or willing to obtain)
– Right to work in the UK
